You, my readers, are amazing for telling me about the wonderful trick of putting a plastic bag in the catch bin on my juicer. That little tip has made juicing so much easier and especially helped out AJ since he’s usually the one offering to help with the clean up.
Watermelon Soda Float
Ingredients
Lime Frozen Yogurt
1 pint store-bought vanilla frozen yogurt, preferably Greek style
1 1/2 tablespoons finely grated lime zest
1 tablespoon fresh lime juice
Watermelon Soda
1/2 medium watermelon
1/3 cup sugar
1 tablespoon fresh lime juice
Pinch of kosher salt
1 cup seltzer
Preparation
Lime Frozen Yogurt
Scoop frozen yogurt into a food processor. Add lime zest and juice and pulse just to combine. Return yogurt to same container, cover, and freeze.
Watermelon Soda
Slice about 1 Β½ cups of watermelon into 1 inch cubes and place into a small bowl. Cover and freeze.
Cut enough watermelon into 1″ pieces to measure 8 cups. (I used two baby size watermelons). Juice in a juicer or puree pieces in a blender until smooth; straining juice through a mesh sieve into a pitcher (you should have about 4 cups juice).
Discard solids (if using blender).
Whisk in simple syrup, lime juice, and salt.
Add seltzer to watermelon purΓ©e. Divide melon cubes among tall glasses. Pour watermelon soda over.
Top with scoops of frozen lime yogurt.
Serve watermelon float with a straw and a long spoon.
