
Ingredients
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/3 cup vegetable oil
1/2 cup boiling water
2 cups white sugar
2 eggs
1/3 cup vegetable oil
1 1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
Directions:
1 Preheat oven to 350.
2 Grease and flour 9×13 inch pan.
3 In a large bowl, stir together the cocoa and baking soda, add 1/3 c veg oil and boiling water. Then mix until well blended and thickened.
4 Stir in the sugar, eggs, and remaining 1/3 c veg oil. Mix together.
5 Finally add the flour, vanilla, and salt. mix just until all of the flour is absorbed.
6 Drop a spoonful of batter into the bottom of each muffin well. Place a peanut butter cup gently in the center then top with a second spoonful of batter.
7 Bake for 13-15 minutes or until top is set and a toothpick inserted into the center comes out slightly wet. After brownies are out of the oven serve warm with a dollop of ice cream and caramel or your favorite toppings.
