This is definitely one of my favorite things in the whole wide world.

Not to mention the fact that there’s nothing hotter than watching a man cook, si?

Si.

This recipe is uber delicious and I’ll tell you why. Because it doesn’t stick to your teeth. Kid you not. It’s probably all in the cooking handy-work but I’ll give you the tips.

We made two batches.
If you cook the caramel for a long time [10-12 min], it’ll be a candied caramel when you load it on the popcorn. To test this, you have to continually drop little bits into a bowl of cold water. Once it hits the water it should harden. If it doesn’t, keep cooking it. This candied method will give you a cracker jack texture.

To make it softer, more chewy, simply bring the caramel to a boil and it becomes a golden brown color, then pour over the popcorn. To test the consistency and make sure it’s just perfect, carefully dip a piece of popcorn into the caramel, let it cool, then chomp it. If you cook it too long it gets in between the soft phase and the candied phase so make sure you watch it closely.

Caramel Popcorn

1/2 cup kernel, unpopped corn
1 cup of butter
2 cups of brown sugar
1/2 cup of karo syrup
1 tsp of salt

Once it’s boiling and ready for the popcorn, add:
1 tsp of vanilla
1/2 tsp of baking soda

So good!
Now go make some!

I wanted to do the head braid without a part so I started the braiding right above my left ear then worked my way around and wrapped the end behind the starting point. I really loved this look because from straight-on there isn’t a part showing where I started and finished the braiding. The ladies at work all had me explain how I did it because it looked so complicated but we all know it really isn’t :)

We took some family photos over the weekend.
I took some, AJ took some, the tripod took some.
Hopefully they’ll improve with years gone by.

This is my new favorite braid.

It’s an upside down braid so you tuck each strand under the others as you braid and you only braid in the top and not the bottom. So the hair closest to my forehead isn’t being brought in, only hair from the top is. Does that make sense? It’s like a half french braid. Anyways, I am loving the look because it’s different from the standard and it’s gotten easier and easier each time I’ve done it. Go try it.

After finishing the first Hunger Games I raved about it so much I begged and pleaded with AJ to read it. And he did. In one day. He stayed up all night finishing it. I was so surprised. It’s seriously that good. So if you haven’t read it yet, run your little legs over to the library and grab it. Everybody’s doing it.

Quote of the Day:

Me: “I had a dream last night that I had a baby.”
AJ: “What color was it?”

What’d you do over the weekend?

I read. I read every day all day. That’s all I did.
I went to the store and read down the aisles, through the crowds, and waiting in line.
I went to the mall and read it between the clothes, along the sidewalks, and at the cash register.
I read while laying in bed, sitting on the couch, and during husbands movie.

Just kidding. But really, I read a lot. I heard the Hunger Games was a good book and let me tell you. That is the understatement of the century. The Twilight nonsense can’t even light a flame to this book. Not sure what that means but I’ve heard it before.

Team Jacob or Team Edward? No, no, no, Team Peeta. This book was thrilling, amusing, charming, suspenseful, engaging, comical, exciting; full of adventure. I laughed, cried, and cheered my way through this book. I couldn’t put it down. I was so anxious to read what was going to happen but not wanting it to end at the same time. I didn’t just read my entire way through the weekend but when I wasn’t reading I was thinking about how much I wanted to keep reading. As soon as I finished it, I screamed in angst wanting to know more! I immediately had to have the second book and even now can’t wait to keep reading. I am such a nerd. That’s what my old roommate would be saying.

Side story:
Once I was talking to said roommate about either an accounting or marketing textbook that I had been reading and I was telling her how much I had enjoyed reading it and then I said to her as that thought came to my head I began thinking “I’m a nerd, I’m a nerd, I’m a nerd.”

Going on then. I bought some gourds. Yes gourds. No I didn’t know that was a word either. But that’s what the receipt said. Gourds. I gorged on gourds this weekend. Bought some, decorated with them, took some pictures of them. Good times.

We also did some family pics. Loving them. They turned out great. Coming from a family of ten it was strange to look at our family pictures and see just two adults. Just two. Plus a dog. That wouldn’t look at the camera. Too preoccupied by the kids playing. *sigh.

Lastly, I finally got a car. I’ve never owned a car that was this expensive and as a result had extreme anxiety every time I drove it. I was so afraid I was going to crash it or wreck it or damage it. It’s subsided a bit and now it’s just a car. Mostly, I love the automatic transmission and the automatic windows and the fact that it tells me the time and the temperature. Ha, just shows how old my other car was.

How was your weekend?
