Peach Cobbler

Sunday has always  been one of those lazy days where you just want to lounge around the house in sweats and take long naps. So of course, it’s also a perfect day for a little comfort food. Luckily my sister Sarah is a pro at making peach cobbler so we brought out the mixer and got to work. 
Sarah’s recipe from memory:
2 cans of peaches in concentrate, 15 oz, undrained
1/2 cup butter
2 cups of sugar
1 1/2 cups flour
1 cup of milk

Directions:
Preheat oven to 350 degrees F.
Combine the peaches, fruit concentrate, and 1 cup sugar in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.
Mix 1/2 cup of butter and 1 cup of sugar in mixing bowl. Add milk and continue mixing. Next, slowly add the flour. If the mixture is too wet, continue to add 1 to 1 1/2 cup more cups of flour until dough is a thick consistency. Pour fruit into a baking dish and drop spoonfuls of dough on top. Finish with a few clumps of butter throughout and bake for 30 to 45 minutes.
To serve, scoop into a bowl and serve with whipped cream or vanilla ice cream.

    Nothing beats cobbler! Drool! My oven is still inoperable due to an overflow from cobbler in June. (Cleaning the oven is a pain plus it is summer!)
